inovapure is a standardized preparation of lysozyme, a natural
antimicrobial enzyme extracted from chicken egg white. Lysozyme
plays an important role in the immune systems of many organisms,
including humans, protecting against infection.
inovapure inhibits the growth of a wide range of Gram-positive
bacteria by effectively rupturing the peptidoglycan layer
of the cell wall.
inovapure is used by winemakers to prevent the growth of
spoilage lactic acid bacteria, to control malolactic fermentation
(MLF) and to stabilize wines after alcoholic fermentation
and/or MLF. It can be used in a flexible manner, allowing
winemakers to achieve different objectives, depending on the
dosage and the stage of addition to the must or to the wine.
